Ingredients

  • 0.3 cup olives black sliced
  • 0.3 cup canola oil 
  • 19 oz cheese tortellini frozen
  • cups meat from a rotisserie chicken cooked chopped
  • tablespoons parsley fresh chopped
  • 0.3 cup olives green sliced
  • teaspoon herbs de provence 
  • tablespoons mayonnaise 
  • servings garnish: parsley sprigs fresh
  • 0.3 cup bell pepper diced red
  • tablespoon red wine vinegar 
  • servings salt to taste
  • tablespoons onion sweet chopped

Directions

  1. Cook tortellini according to package directions; drain. Plunge into ice water to stop the cooking process; drain and place in large bowl. Stir in chicken and next 5 ingredients.
  2. Whisk together mayonnaise, red wine vinegar, and herbes de Provence.
  3. Add oil in a slow, steady stream, whisking constantly until smooth.
  4. Pour over tortellini mixture, tossing to coat. Stir in salt to taste. Cover and chill at least 25 minutes.
  5. Garnish, if desired.
  6. *1 tsp. dried Italian seasoning may be substituted.
  7. Note: For testing purposes only, we used Rosetto Cheese Tortellini.
  8. Tuna Tortellini Salad: Substitute 1 (12-oz.) can albacore tuna, rinsed and drained well, for chicken. Prepare recipe as directed.
