  • 0.5 cup basil leaves fresh chopped

  • 0.8 cup part-skim mozzarella cheese shredded
  • 1.3 pounds chicken breasts boneless skinless cut into chunks
  • cups cut-up vegetables yellow assorted (zucchini, summer squash and/or tomatoes)

Directions

  1. Preheat oven to 40
  2. Combine Country Crock
  3. Spread with garlic in small bowl.Toss vegetables, chicken, basil, and 4 tablespoons
  4. Spread mixture in shallow 2 to 3-quart baking dish.
  5. Sprinkle with cheese.
  6. Toss bread crumbs with remaining 2 tablespoons
  7. Spread mixture; then sprinkle over top.
  8. Bake 40 minutes or until chicken is thoroughly cooked and crumbs are toasted.
