Ingredients

  • 17.5 oz sugar cookie mix 
  • 0.5 cup butter softened (1 stick)
  •  eggs slightly beaten
  • 1.5 cups granulated sugar 
  • 0.3 cup flour all-purpose
  • tablespoon lemon zest grated
  • teaspoon double-acting baking powder 
  • 0.5 teaspoon salt 
  • 0.3 cup juice of lemon fresh (1 large lemon)
  • tablespoons powdered sugar

Directions

  1. Heat oven to 350°F. In large bowl, beat crust ingredients with electric mixer on low speed until crumbly. In bottom of ungreased 13x9-inch pan, press mixture evenly.
  2. Bake about 20 minutes or until light golden brown. Cool 10 minutes.
  3. Meanwhile, in same large bowl, stir together filling ingredients except lemon juice. Stir in lemon juice.
  4. Pour mixture over warm crust.
  5. Bake 25 to 30 minutes longer or until top is light golden brown. Cool completely, about 1 hour.
  6. Sprinkle with powdered sugar. For bars, cut into 6 rows by 6 rows.
