Welcome to the vibrant world of plant-based cooking with our delightful Sunshine Citrus Salad, a refreshing masterpiece that bursts with the essence of summer. This recipe is a true celebration of bright flavors and bold colors, perfectly designed to elevate any meal as a stunning side dish, a light antipasti, or a satisfying starter. With its remarkable ability to be prepared in just 25 minutes, this salad is an ideal choice for busy weeknights or effortless entertaining, yet it never compromises on taste or visual appeal. Serving up to 25 people, it is generously portioned to ensure everyone gets a taste of sunshine in every bite.

What truly sets this dish apart is its harmonious blend of sweet and tangy notes. The star of the show is the homemade caramelized nut glaze, where crunchy PLANTERS almonds are gently toasted with a touch of sugar until they form a luscious, glossy coating. This sweet-savory element provides a delightful crunch that contrasts beautifully with the juicy, segmented slices of red grapefruit and navel orange. For those watching their dietary intake, rest assured that this salad is strictly vegetarian, vegan, gluten-free, and dairy-free, making it an inclusive option for the whole family without sacrificing flavor.

At the heart of the platter, a bed of crisp mixed salad greens tossed with thinly sliced red onion rings offers a fresh, peppery counterpoint to the rich fruit and nut components. The entire composition is finished with a drizzle of KRAFT Balsamic Vinaigrette, which ties all the ingredients together with its signature depth and acidity. The result is a colorful, texturally complex dish that is as easy to make as it is delicious to eat. Whether you are hosting a large gathering or simply want to add a pop of color to your lunch, this Sunshine Citrus Salad is guaranteed to be the highlight of your table.
