Ingredients

  • 0.3 ounce yeast dry
  • 1.8 cups water divided (110° to 115°)
  • 0.3 cup brown sugar packed
  • 0.3 cup blackstrap molasses 
  • tablespoons shortening 
  • teaspoons salt 
  • 2.5 cups rye flour 
  • 3.8 cups flour all-purpose
  • tablespoons butter melted

Directions

  1. In a bowl, dissolve yeast in 1/4 cup water.
  2. Add sugar, molasses, shortening, salt and remaining water; stir well.
  3. Add rye flour; beat until smooth.
  4. Add enough all-purpose flour to form a soft dough.
  5. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes.
  6. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. Punch dough down.
  7. Shape into 4 round loaves.
  8. Place on greased baking sheets. Cover and let rise until doubled, 45-60 minutes.
  9. Bake at 350° until golden brown, 30-35 minutes.
  10. Brush with butter.
