  • 10  ears corn fresh husked
  • 0.5 cup cilantro leaves fresh chopped
  • 0.3 cup olive oil extra virgin extra-virgin
  • pounds plum tomatoes cut into 1/2-inch cubes
  • 0.8 cup onion red finely chopped
  • tablespoon red wine vinegar

  2. Drain; cool to room temperature.

  4. Transfer corn to large bowl.
