  • stalks celery diagonally sliced
  • tsp gingerroot fresh grated
  • 0.3 cup parsley fresh finely chopped
  • Tbsp honey 
  • Tbsp juice of lemon 
  • 0.5 cup miracle whip dressing light
  • 1.5 lb sweet potatoes cubed cooked peeled ( 4 medium)

  1. Toss sweet potatoes, celery and parsley in large bowl.
  2. Mix dressing, honey, lemon juice and ginger.
  3. Add to potato mixture; mix lightly. Cover.
  4. Refrigerate several hours or until chilled.
