  • 0.3 teaspoon pepper black to taste
  • 0.5 cup firmly brown sugar light packed
  • tablespoons butter melted ()
  • 0.3 teaspoon ground cinnamon 
  • 0.3 teaspoon ground ginger 
  • tablespoons juice of lemon fresh
  • 0.5 teaspoon nutmeg or freshly grated
  • 0.5 cup orange juice fresh
  • teaspoons orange zest finely grated
  • 0.3 teaspoon salt to taste
  • pounds firmly unseasoned sweet potatoes packed mashed (see headnote)

Directions

  1. Preheat the oven to 350° F. Butter a 2-quart casserole and set aside.
  2. Combine all ingredients in a large mixing bowl, beating until smooth. Taste for salt and pepper and adjust as needed.

  4. Bake uncovered on the middle oven shelf for about 45 minutes or until tipped with brown.
