Ingredients

  • 0.8 lb baking potatoes 
  • large eggs 
  • 0.5 cup flour all-purpose
  • 0.5 teaspoon rosemary leaves fresh chopped
  • 0.3 teaspoon kosher salt 
  • 0.3 cup parmesan cheese freshly grated
  • 0.3 teaspoon pepper freshly ground
  • 0.5 lb sweet potatoes and into

Directions

  1. Preheat oven to 40
  2. Prick all potatoes with a fork, and bake on a jelly-roll pan 1 hour.
  3. Cool potatoes 20 minutes. Peel and mash until smooth.
  4. Add cheese and next 4 ingredients, and stir until smooth. Fold in flour just until blended.
  5. Divide dough into 4 equal portions; dust with flour.
  6. Roll each into a 3/4-inch-diameter rope on a well-floured surface.
  7. Cut into 1-inch pieces; place dumplings on a lightly floured baking sheet.
  8. Cook dumplings, 10 to 12 at a time, in 3 qt. boiling water over medium-high heat, 3 minutes.
  9. Remove with a slotted spoon.
