Ingredients

  • 0.3 cup brown sugar packed
  • tablespoons butter 
  • teaspoon ground cinnamon 
  • 0.8 cup pecans chopped
  • pound pork sausage 
  • pounds sweet potatoes

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Form sausage into round patties.
  3. Place patties in a large, deep skillet. Cook over medium high heat until brown.
  4. Drain and set aside.
  5. Wash yams, prick with fork and place on baking sheet.
  6. Bake for 1 hour or until yams are soft. Set aside to cool.
  7. Cut cooled yams into 1 to 2 inch cubes and place in 2 1/2 quart casserole dish.
  8. Add sausage, butter, brown sugar, pecans and cinnamon.
  9. Mix thoroughly, cover and bake for 30 to 40 minutes or until hot and bubbly.
