Ingredients

  • 0.3 teaspoon pepper black
  • 16 ounce cannellini beans beans white rinsed drained canned
  • large egg whites lightly beaten
  • large eggs lightly beaten
  • tablespoon jalapeno finely chopped
  •  kalamata olives pitted chopped
  • teaspoon olive oil 
  • 1.5 cups onion chopped
  • 0.5 teaspoon salt 
  • cups torn swiss chard

Directions

  1. Preheat broiler.
  2. Place egg whites, eggs, salt, and black pepper in a large bowl, and stir well with a whisk. Stir in jalapeno, mint (if desired), olives, and beans.
  3. Heat the oil in a large nonstick skillet over medium-high heat.
  4. Add Swiss chard and onion; saute 3 minutes or until Swiss chard is tender.
  5. Pour the egg mixture into pan; reduce heat to medium-low, and cook 10 minutes or until almost set.
  6. Wrap handle of skillet with foil. Broil egg mixture for 4 minutes or until golden brown.
