  • tablespoons canola oil divided
  • teaspoons chili paste depending on your taste pref (such as sambal oelek)
  • cups rice long-grain white hot cooked
  • teaspoons cornstarch 
  • tablespoon sesame oil dark divided
  • tablespoon ginger fresh grated peeled
  • tablespoon garlic fresh minced
  • 0.3 cup spring onion (1-inch)
  • 0.5 cup beef broth fat-free
  • tablespoons soy sauce 
  • 0.5 cup onion vertically sliced
  •  bell pepper red cut into strips
  • tablespoon rice vinegar 
  • 0.3 cup roasted peanuts unsalted chopped
  • 0.3 teaspoon salt 
  • pound chicken breast halves boneless skinless cut into bite-sized pieces
  • cup snow peas 
  •  bell pepper yellow cut into strips

Directions

  1. Combine 2 teaspoons sesame oil and next 6 ingredients (through salt) in a small bowl.
  2. Heat a wok or large skillet over medium-high heat.
  3. Add remaining 1 teaspoon sesame oil and 1 tablespoon canola oil; swirl.
  4. Add chicken; stir-fry 2 minutes.
  5. Remove chicken from pan.
  6. Add remaining 1 tablespoon canola oil; swirl.
  7. Add bell peppers and next 4 ingredients (through garlic); stir-fry 1 minute.
  8. Add broth mixture; cook 30 seconds or until thick. Return chicken to pan; cook 4 minutes or until chicken is done. Spoon 1/2 cup rice onto each of 4 plates; top each with 1 cup chicken mixture, green onions, and peanuts.
