  • teaspoons olive oil 
  •  onion diced finely
  • cup parsley chopped
  • servings salt to taste
  •  tomatoes diced
  • 0.5 cup water boiling

Directions

  1. Place the bulgur in a small mixing bowl.
  2. Add the boiling water, mix and cover with a towel;
  3. Let stand for 1 hour.
  4. Drain any excess water.
  5. Combine the parsley, mint, tomatoes, onion, olive oil, lemon juice and salt.
  6. Add the bulgur; mix well and serve.
