Ingredients

  • 0.3 cup avocado chopped
  • 0.5 cup kidney beans canned drained
  • 0.3 teaspoon chili powder 
  • 6-inch flour tortillas ()
  • tablespoons green onions chopped
  • 0.5 teaspoon ground cumin 
  • 0.5 teaspoon jalapeno seeded chopped
  • cups lettuce shredded
  • ounce cheddar cheese shredded reduced-fat
  • 1.5 cups meat sauce hearty
  • tablespoons nonfat cream alternative sour
  • 0.5 cup tomatoes chopped

Directions

  1. Combine first 5 ingredients in a small saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 25 minutes, stirring frequently.
  2. Cut each tortilla into 6 wedges.
  3. Place wedges on an ungreased baking sheet.
  4. Bake at 350 for 5 minutes on each side or until crisp and golden. Set aside.
  5. Place lettuce evenly on 2 salad plates. Spoon meat mixture evenly over lettuce.
  6. Sprinkle 1/4 cup tomato, 2 tablespoons avocado, and 1 tablespoon green onions around the edge of each salad.
  7. Sprinkle cheese evenly over meat mixture. Top each salad with 1 tablespoon sour cream.
  8. Serve with tortilla wedges.
