  • 0.3 cup apple cider vinegar 
  • tsp caraway seeds 
  • cup matchstick carrots 
  • 0.5 tsp fennel seeds 
  • 0.3 cup chives fresh chopped
  •  granny smith apples thinly sliced
  • 0.3 cup mayonnaise 
  • 0.5 teaspoon pepper freshly ground
  • cups cabbage shredded red finely (1 medium head)
  • teaspoon sugar

Directions

  1. Place caraway and fennel seeds in a mortar bowl or spice grinder; grind using a pestle or grinder until seeds become a medium powder.
  2. Combine pepper, vinegar, and crushed seeds in a small bowl; cover.
  3. Let stand 1 hour.
  4. Whisk in mayonnaise and sugar. Season with salt to taste.
  5. Combine cabbage and next 3 ingredients in a large bowl.
  6. Add vinegar mixture, and toss until blended.
  7. Let stand 10 minutes to 1 hour before serving.
