  • pound chanterelles fresh trimmed halved quartered ( or if large)
  • teaspoons dijon mustard 
  • tablespoons flat parsley chopped
  • small garlic clove minced
  • servings pepper black freshly ground
  • servings juice of lemon fresh
  • tablespoons olive oil extra virgin extra-virgin
  • small shallots thinly sliced
  • tablespoons citrus champagne vinegar

Directions

  1. Place mushrooms in a steamer basketand set over a pot filled with 1" gentlysimmering water (do not allow water totouch mushrooms). Cover and steammushrooms until tender, about 5 minutes.
  2. Transfer mushrooms to a baking sheetand let cool slightly.
  3. Meanwhile, whisk oil, parsley, vinegar,Dijon mustard, shallot, and garlic ina medium bowl. Season with salt, pepper,and lemon juice.
  4. Add mushrooms; tossto coat evenly.
  5. Let marinate for 30 minutes.Season to taste with salt, pepper, andmore lemon juice, if desired.
