Ingredients

  • ounces bite-size baked tortilla chips such as tostitos scoops)
  • 15 ounce pinto beans rinsed drained canned
  • 14.5 ounce canned tomatoes diced undrained canned
  • teaspoons chipotle chile powder 
  • 0.3 cup green onions thinly sliced
  • 0.8 teaspoon ground cumin 
  • 0.5 pound ground sirloin 
  • ounces queso fresco crumbled
  • tablespoons no-salt-added tomato paste

Directions

  1. Cook beef in a large nonstick skillet over medium-high heat until browned, stirring to crumble.
  2. Drain well; return beef to pan.
  3. Add tomato paste and next 4 ingredients (through diced tomatoes), and bring to a boil. Reduce heat, and simmer 5 minutes or until thick, stirring occasionally.
  4. Spoon meat mixture into a serving bowl; top with crumbled cheese and green onions.
