  • 0.8 cup avocado cubed
  • 0.8 teaspoon pepper black freshly ground
  • cups rice long-grain hot cooked
  • 0.8 teaspoon kosher salt 
  • pound pork tenderloin trimmed cut into 3/4-inch cubes
  • 1.5 cups salsa fresh refrigerated
  • 0.3 cup cup heavy whipping cream light sour
  • 0.3 cup water

Directions

  1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray.
  2. Add pork to pan; sprinkle with 3/4 teaspoon kosher salt and 3/4 teaspoon freshly ground black pepper. Saut for 8 minutes or until lightly browned.
  3. Add salsa and 1/4 cup water to pan; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened.
  4. Serve pork mixture over rice; top with sour cream and avocado.
