- 1 carrots grated
- 1 fresno chile pepper seeded finely chopped
- 1 cucumber seedless peeled thinly sliced
- 0.3 cup mint leaves fresh
- 1 juice of lime
- 2 tablespoons rice vinegar
- 1 bunch scallion whites finely chopped
- 1 teaspoon sea salt fine
- 2 teaspoons caster sugar
