Ingredients

  • 2.7 cups brown rice chilled cooked
  • 0.5 cup green onion pieces (1-inch)
  • Tbsp planters peanut oil 
  • 0.5 cup planters cocktail peanuts chopped
  • oz pineapple tidbits in juice drained canned
  • medium bell pepper red cut into strips ( 1-1/2 cups)
  • 0.3 cup teriyaki sauce 
  • oz spicy tofu firm cubed

Directions

  1. Pour teriyaki sauce over tofu in shallow dish. Refrigerate 5 to 10 minutes to marinate.
  2. Drain tofu; reserve teriyaki sauce.
  3. Heat oil in large skillet on medium-high heat.
  4. Add tofu; cook 3 to 4 minutes or until golden brown on all sides, stirring occasionally.
  5. Remove from skillet.
  6. Add red pepper to skillet; cook and stir 2 minutes.
  7. Add green onion; cook and stir 1 minute.
  8. Add rice and pineapple; mix lightly. Cook 2 to 3 minutes or until heated through, stirring frequently.
  9. Add tofu, peanuts and reserved teriyaki sauce; mix lightly. Cook until heated through, stirring occasionally.
