  • 0.1 teaspoon pepper black
  • pound chicken breast 
  • 1.5 teaspoons fish sauce 
  • tablespoons cilantro leaves fresh chopped
  • 0.8 cup lite coconut milk light
  • medium onion cut into 1/4-inch wedges
  • 0.5 teaspoon curry paste red
  • ounce roasted peppers red drained coarsely chopped
  • 0.3 teaspoon salt 
  • 1.5 teaspoons vegetable oil

Directions

  2. Add onion, and cook 4 minutes or until onion is golden, stirring frequently. Stir in coconut milk, curry paste, and black pepper.
  3. Add the chicken; bring to a simmer. Cook 8 minutes or until chicken is done, stirring frequently. Stir in cilantro and remaining ingredients, and cook 1 minute.
