Ingredients

  • 32 oz chicken broth (4 cups)
  • tablespoons brown sugar packed
  • tablespoons soya sauce 
  • tablespoons rice vinegar 
  • teaspoons curry powder 
  • 0.5 cup bell pepper red coarsely chopped
  • tablespoon jalapeno seeded finely chopped
  • cups rotisserie chicken cut chopped (from 2- to 2 1/2-lb chicken)
  • tablespoon cilantro leaves fresh chopped

Directions

  1. In 3-quart saucepan, mix all ingredients except chicken and cilantro.
  2. Heat to boiling over medium-high heat. Reduce heat to medium. Simmer uncovered 3 to 5 minutes or until bell pepper is crisp-tender.
  3. Stir in chicken. Cook 1 to 2 minutes or until chicken is hot. Just before serving, add cilantro.
