  • tablespoon chile paste with garlic
  • 0.3 cup parsley fresh chopped
  •  garlic clove minced
  • 0.5 cup coconut milk light
  • 0.3 cup juice of lime fresh
  • 0.3 teaspoon lime rind 
  • pounds mussels scrubbed ( 40 mussels)
  • 0.3 cup pickled ginger minced
  • 0.5 cup shallots minced
  • teaspoons vegetable oil

Directions

  1. Heat the oil in a large Dutch oven over medium-high heat.
  2. Add the shallots, chile paste, and garlic; cook 2 minutes or until tender, stirring constantly.
  3. Add coconut milk and next 5 ingredients (coconut milk through mussels); bring to a boil. Cover and cook 5 minutes or until shells open.
  4. Remove from heat; discard any unopened shells.
  5. Garnish with parsley sprigs, if desired.
