Ingredients

  • teaspoon sriracha 
  • 0.3 cup cilantro leaves fresh chopped
  •  garlic clove crushed
  • ounce pasta uncooked
  • tablespoons soya sauce low-sodium
  • tablespoons vegetable oil; peanut oil preferred 
  • tablespoon rice wine vinegar fresh
  • tablespoon smooth peanut butter 
  • ounce sugar snap peas fresh
  • ounce baked tofu plain cut into cubes

Directions

  1. Bring 2 quarts water to a boil in a saucepan.
  2. Place linguine in boiling water 5 minutes; add peas, and cook 2 minutes.
  3. Combine peanut oil and next 5 ingredients.
  4. Drain pasta mixture, and return to pan. Stir in peanut sauce and tofu.
  5. Sprinkle with chopped cilantro.
  6. Serve immediately.
