If you’re looking for a delightful beverage that tantalizes the taste buds while adhering to various dietary restrictions, look no further than The Buckley. This unique cocktail is a celebration of flavors, seamlessly blending the herbal notes of fresh sage with the zesty brightness of lime. Not only is it a stunning addition to any gathering, but it’s also vegetarian, vegan, gluten-free, dairy-free, and low FODMAP—making it accessible for a wide range of dietary preferences.

The preparation is as much an adventure as the sipping. Start by crafting your own sage simple syrup, allowing the essence of the herb to infuse into sugar and water over gentle heat. This step not only adds a rich backdrop to the cocktail but also fills your kitchen with a tantalizing aroma. After shaking together gin, Cocchi Aperitivo Americano, and freshly squeezed lime juice with your homemade syrup, the magic truly happens when you pour the vibrant concoction into a chilled champagne coupe and let Campari cascade to the bottom—a visual masterpiece!

Ideal for a summer soirée or as a refreshing evening treat, The Buckley is garnished with a fresh sage leaf, inviting you to take a sip. With each taste, you’ll experience a delightful balance of sweetness, bitterness, and herbal freshness. Get ready to impress your guests or simply indulge yourself with this invigorating and herbaceous libation!

  • 0.3 ounce campari
  • 20  sage fresh for garnish
  • ounce hendrick's gin
  • 0.5 ounce lillet blanc
  • 0.8 ounce juice of lime freshly squeezed
  • cup sugar

Equipment

Directions

  1. In a small pot, combine 20 sage leaves, sugar, and 1 cup of water. Bring to a boil then lower heat to moderately low and simmer until aromatic and slightly thickened, about 10 minutes. Allow syrup to cool, then pour through a fine-mesh sieve and discard the sage. DO AHEAD: The sage simple syrup can be made in advance and stored, in an airtight container in the refrigerator, up to 1 week
  2. In a cocktail shaker, combine 3/4 ounce sage simple syrup with the gin, Cocchi Aperitivo Americano, and lime juice. Fill the shaker with ice and shake vigorously until completely mixed, about 20 seconds. Strain into a chilled champagne coupe, then slowly add the Campari so that it settles at the bottom of the glass.
  3. Garnish with a fresh sage leaf.
