Ingredients

  • teaspoon angostura bitters 
  • cups apple cider 
  • servings seltzer water 
  • 1.5 cups rum dark
  • slices lime 
  • 0.8 cup juice of lime fresh
  • 0.3 cup sugar 
  • sprigs thyme leaves

Directions

  1. Bring sugar and 1/3 cup water to a boil in a small saucepan, stirring to dissolve sugar.
  2. Remove from heat, add thyme sprigs, and cover.
  3. Let stand 10 minutes, then strain into a small jar.
  4. Let cool.
  5. DO AHEAD: Syrup can be made 1 month ahead. Cover and chill.
  6. Mix thyme syrup, cider, rum, lime juice, and bitters in a pitcher. Divide among rocks glasses filled with ice; top off with club soda.
  7. Garnish with thyme sprigs and lime slices.
  8. DO AHEAD: Thyme syrup, cider, rum, lime juice, and bitters can be mixed 4 hours ahead. Cover and chill.
