  • tablespoons olive oil 
  • tablespoons red-wine vinegar 
  •  serrano chile fresh coarsely chopped
  • 0.5 pound tomatillos fresh husked rinsed quartered
  • 1.5 pounds tomatoes divided chopped
  • 0.5 cup onion white divided chopped
