Ingredients

  • tablespoons canola oil 
  • 0.3 cup firmly cilantro leaves fresh packed chopped
  • large cucumber peeled thinly sliced into half moons
  •  green onions thinly sliced
  • 0.3 cup juice of lime fresh
  • 0.3 cup firmly mint leaves fresh packed chopped
  • 0.3 cup peanuts chopped
  • 0.5 medium size onion red thinly sliced
  • 0.5 teaspoon pepper dried red crushed
  • 0.5 cup rice vinegar 
  • teaspoon salt 
  • 12 oz grain spaghetti whole
  • tablespoon sugar 
  • teaspoon sugar 
  • medium tomatoes seeded chopped

Directions

  1. Whisk together vinegar and 1 Tbsp. sugar in a bowl.
  2. Add onion, and let stand 30 minutes; drain, reserving 2 Tbsp. vinegar mixture.
  3. Prepare pasta according to package directions.
  4. Place chopped tomatoes and next 9 ingredients in a serving bowl.
  5. Add hot cooked pasta, onion, and reserved vinegar mixture, gently tossing to combine.
  6. Sprinkle with peanuts.
  7. Serve immediately, or cover and chill up to 24 hours.
  8. Note: For testing purposes only, we used Mueller's Whole Grain Spaghetti.
