Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • tablespoon olive oil extravirgin
  • 0.3 cup parsley fresh chopped
  • tablespoon rosemary leaves fresh chopped
  •  garlic clove minced
  • teaspoons lemon zest grated
  • pounds plum tomatoes quartered
  • 0.5 teaspoon salt

Directions

  1. Preheat oven to 40
  2. Place all ingredients in a large bowl, and toss well to combine.
  3. Place tomato mixture in a 13 x 9-inch baking dish.
  4. Bake at 400 for 30 minutes, stirring every 10 minutes.
  5. Remove mixture from oven.
  6. Preheat broiler.
  7. Broil tomatoes for 10 minutes or until they begin to brown.
  8. Remove from oven; stir gently to combine.
  9. Place chilled tomatoes in heavy-duty zip-top plastic bags; freeze for up to 3 months.
