Ingredients

  • pound flank steak 
  •  garlic clove chopped
  • servings kosher salt 
  • tablespoon brown sugar light packed ()
  • tablespoons juice of lime fresh
  • tablespoon olive oil 
  • teaspoon hot sauce hot
  •  spring onion white thinly sliced ( and pale-green parts only)
  • teaspoon sesame oil toasted
  • 0.3 cup soya sauce

Directions

  1. Combine scallions and next 7 ingredients in a large resealable plastic bag and mix well.
  2. Add steak; seal bag, pressing out excess air. Turn steak to coat. Refrigerate overnight, turning bag occasionally.
  3. Build a medium-hot fire in a charcoal grill, or heat a gas grill to high.
  4. Remove steak from bag; wipe off excess marinade. Season both sides lightly with salt. Grill steak until well browned, about 6 minutes per side for medium-rare.
  5. Transfer to a cutting board and let rest for 10 minutes. Slice thinly against the grain.
