  • teaspoons baking soda 
  • small banana diced ripe
  • cup soy oil for soy-free]
  • 0.3 cup rum dark
  •  eggs 
  • 0.5 cup preserved ginger packed (health food stores)
  • cup golden raisins 
  •  optional: lemon seeded quartered
  • large navel oranges seeded quartered
  • 0.5 cup pineapple juice 
  • 0.3 teaspoon salt 
  • cups rice flour whole wheat
  • 1.5 cups sugar

Directions

  1. Preheat oven to 350 °F.Finely grind the ginger in a food processor.
  2. Add the citrus and pulse until finely ground but not mushy.Set the mixture aside.In the same food processor bowl, cream the oil, rum, sugar and eggs.
  3. Mix the flour with the baking soda and salt in a bowl.
  4. Add the flour mixture alternatively with the juice, pulsing only until well combined.
  5. Add the reserved citrus mixture, the banana and raisins, and pulse just until combined.
  6. Pour the batter into a greased 10 inch tube pan.
  7. Bake 1 hour or until a knife inserted in the center comes out clean.Unmold and invert to cool.
