Ingredients

  •  avocados ripe cut into wedges
  • servings pepper black freshly ground
  • teaspoons coarse salt 
  • 0.3 cup cilantro leaves fresh chopped
  •  jalapeño peppers minced
  •  mangos diced ripe
  • 0.7 cup olive oil extra-virgin
  •  papayas diced ripe
  •  pineapple diced
  •  poblano chiles cut into 1/4-inch strips
  •  onion red thinly sliced
  •  roasted bell pepper red cut into strips
  •  roasted bell pepper yellow cut into strips
  • 0.3 cup sherry wine vinegar 
  • 30 large shrimp deveined peeled

Directions

  1. Sprinkle onion slices with coarse salt, and rub them between your hands until you no longer feel the salt.
  2. Drain onions in a colander 15 minutes. Wring out as much liquid as you can by squeezing small bunches of the slices in your fists.
  3. Combine onions, pineapple, and next 7 ingredients in a large bowl.
  4. Combine olive oil and vinegar; toss with fruit mixture.
  5. Grill shrimp 3 minutes on each side or until opaque, and immediately toss into the salad. Gently stir in avocado. Season to taste with black pepper.
