  • tablespoons butter divided
  • tablespoons capers 
  • 0.5 cup cooking wine dry white
  • 0.3 cup flour all-purpose
  • tablespoons flat-leaf parsley fresh chopped
  •  garlic cloves minced
  • tablespoons juice of lemon fresh
  • leaf garnishes: lemon wedges fresh chopped
  • tablespoon olive oil 
  • 0.5 teaspoon pepper 
  • 0.5 teaspoon salt 
  • pound turkey cutlets

Directions

  1. Combine flour, salt, and pepper; dredge turkey in mixture.
  2. Melt 2 Tbsp. butter with oil in a large skillet over medium-high heat; add turkey, and cook, in batches, 1 1/2 minutes on each side or until golden.
  3. Transfer to a serving dish, and keep warm.
  4. Add white wine, lemon juice, and remaining 1 Tbsp. butter to skillet, stirring to loosen particles from bottom of skillet. Cook 2 minutes or just until thoroughly heated.
  5. Stir in garlic, parsley, and capers; spoon over turkey.
  6. Garnish, if desired.
  7. Serve immediately.
