Turkey Tenderloins with Black Bean Salsa

Ingredients

  • 15 ounce no-salt-added black beans drained canned
  • cloves garlic crushed
  • 0.5 teaspoon ground cumin 
  • 0.5 teaspoon ground pepper red
  • 0.5 cup juice of lime fresh
  • cup no-salt-added salsa 
  • 0.3 teaspoon salt 
  • pound turkey tenderloins 

Equipment

  • grill
  • ziploc bags

Directions

  1. Combine black beans and salsa, stirring well. Cover and chill.
  2. Combine lime juice and next 4 ingredients in a heavy-duty, zip-top plastic bag.
  3. Add turkey; seal bag, and shake until turkey is well coated. Marinate in refrigerator 20 minutes, turning bag once.
  4. Remove turkey from marinade, reserving marinade.
  5. Place marinade in a small saucepan; bring to a boil.
  6. Remove from heat, and set aside. Coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400).
  7. Place turkey on rack; grill, covered, 8 to 10 minutes on each side or until turkey is done, turning and basting with reserved marinade.
  8. Cut turkey diagonally across grain into thin slices.
  9. Serve with Black Bean Salsa.
