  • cup refried black beans 
  • 0.5 cup cilantro leaves fresh loosely packed
  •  garlic cloves minced
  •  lime wedges 
  • tablespoons olive oil 
  • large onion sliced
  •  poblano pepper seeded sliced
  • cup queso fresco fresh crumbled ( Mexican cheese)
  • large bell pepper red sliced
  • servings salt to taste
  •  tostada shells 
  • cups roasted turkey shredded
  • servings spicy cranberry-chipotle sauce

Directions

  1. Preheat oven to 40
  2. Saut first 3 ingredients in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until onion is golden. Stir in turkey and garlic; cook 2 to 3 minutes or until thoroughly heated. Season with salt to taste.
  3. Bake tostada shells on a baking sheet at 400 for 3 minutes.
  4. Spread shells with refried beans; top with turkey mixture.
  5. Drizzle with a small amount of Spicy Cranberry-Chipotle Sauce.
  6. Sprinkle with queso fresco.
  7. Bake at 400 for 10 to 12 minutes or until thoroughly heated.
