  • cup tomatoes whole canned chopped
  • teaspoons thyme leaves fresh chopped
  • cloves garlic minced
  • servings ground pepper black to taste
  • 1.5 cups kidney beans cooked
  • cups chicken broth low fat, low sodium
  • tablespoon olive oil 
  •  onion chopped
  • cup seashell pasta 
  •  bell pepper red chopped
  • 0.5 cup pkt spinach chopped

Directions

  1. In a large pot over medium high heat, combine the oil, onion and garlic and saute for 5 minutes.
  2. Add the red bell pepper and saute for 3 more minutes.
  3. Add the broth, tomatoes and beans. Bring to a boil, reduce heat to low and simmer for 20 minutes.
  4. Add the thyme, spinach and pasta. Simmer for 5 more minutes and pepper to taste.
