Ingredients

  • pint poached berries fresh assorted (such as raspberries, blueberries, blackberries, and strawberries)
  • 2.5 teaspoons gelatin powder unflavored (from 2 packages)
  • cup sugar 
  • 1.5 teaspoons vanilla extract 
  • 0.3 cup water cold
  • cups whipping cream 
  • 0.3 cup wine sweet (such as Moscato)

  • frying pan
  • sauce pan

Directions

  1. Pour 1/4 cup cold water into small custard cup.
  2. Sprinkle gelatin over.
  3. Let stand until gelatin softens, about 15 minutes. Bring 1 inch of water in small skillet to boil.
  4. Place cup with gelatin in water. Stir until gelatin dissolves, about 2 minutes.
  5. Remove from heat.
  6. Combine cream and 2/3 cup sugar in heavy medium saucepan. Stir over medium heat just until sugar dissolves.
  7. Remove from heat.
  8. Mix in vanilla and gelatin. Divide pudding mixture among 8 wineglasses. Cover and chill until set, at least 6 hours and up to 1 day.
  9. Combine berries and remaining 1/3 cup sugar in medium bowl. Crush berries slightly with back of spoon.
  10. Mix in wine.
  11. Let compote stand until berry juices and sugar form syrup, stirring often, at least 1 hour and up to 2 hours.
  12. Spoon compote over puddings.
