  • 0.5 teaspoon pepper black freshly ground
  • teaspoons butter divided
  • 0.5 cup less-sodium chicken broth fat-free
  • 0.3 teaspoon ground ginger 
  • 0.3 teaspoon ground sage 
  • teaspoon hungarian paprika sweet
  • ounce pre mushrooms 
  • teaspoons olive oil divided
  • 0.5 teaspoon salt 
  • tablespoons freshly shallots chopped
  • tablespoons cooking sherry 
  • pound veal scaloppine ()
  • 0.3 cup irish whiskey

Directions

  1. Combine first 5 ingredients in a small bowl; sprinkle evenly over veal.
  2. Heat 1 teaspoon oil and 1 teaspoon butter in a large nonstick skillet over medium-high heat.
  3. Add half of veal to skillet. Cook 1 minute on each side or until lightly browned.
  4. Remove from skillet; set aside, and keep warm. Repeat procedure with remaining olive oil, butter, and veal.
  5. Reduce heat to medium.
  6. Add the chopped shallots and presliced mushrooms to pan, and cook 1 minute.
  7. Add Irish whiskey, scraping pan to loosen browned bits.
  8. Add broth and sherry; simmer 3 minutes or just until sauce begins to thicken. Return veal to pan. Cover and simmer 1 minute or until thoroughly heated.
  9. Place veal on a serving platter, and top with mushrooms and sauce.
  10. Sprinkle with chopped fresh parsley, if desired.
