Ingredients

  • cups baby spinach chopped
  • teaspoon pepper black freshly ground
  • tablespoons olive oil extra virgin 
  • tablespoons thyme leaves fresh minced
  • tablespoon garlic minced
  • cup bell pepper green
  • teaspoons kosher salt 
  • cup bell pepper red
  • pound barilla grain spaghetti whole
  • cups mushrooms white sliced
  • cup onion diced white finely
  • cup bell pepper yellow
  • cups baby squash yellow
  • cups zucchini sliced

Equipment

Directions

  1. Cook Barilla Spaghetti according to package directions.
  2. Drain and set aside.
  3. Heat oil in a large skillet over medium heat.
  4. Saute onions, zucchini, yellow squash, bell peppers, garlic, mushrooms and spinach until softened, about 5 minutes.
  5. Place cooked spaghetti noodles back into large pot. Stir in vegetables. Season with salt and pepper, stirring.
  6. Heat olive oil into a small saucepan over medium heat. Stir in garlic and fresh thyme. Stir and cook for 3 minutes, until hot.
  7. Pour over spaghetti and vegetables, stirring.
  8. Serve warm.
