  • 12 ounce asparagus trimmed
  •  bay leaf 
  • servings pepper black freshly ground
  •  peppercorns whole black
  • small heads broccoli cut into 2" florets
  •  carrots peeled halved lengthwise
  • 10  coriander seeds 
  •  fennel bulb with some core attached trimmed cut into 8 wedges
  • servings cilantro leaves fresh
  •  garlic cloves crushed
  • servings kosher salt 
  •  optional: lemon 
  • cups low-salt chicken broth 
  • tablespoons olive oil divided
  • teaspoon sherry vinegar ()
  • sprigs thyme leaves 
  •  vanilla pod split
  • medium onions white with some root attached cut into 6 wedges

Directions

  1. Using a small sharp knife, cut all peel andwhite pith from lemon; discard.
  2. Cut fleshcrosswise into 1/4"-thick slices; set aside.
  3. Line a large rimmed baking sheet witha kitchen towel. Cook broccoli in a large potof boiling salted water for 1 minute. Usinga slotted spoon, transfer to prepared sheet.Repeat in same pot with carrots, onions,asparagus, and fennel, returning water to aboil between batches.
  4. Place chicken broth in a small saucepanover low heat and scrape in seeds fromvanilla bean; add bean. Bring to a simmer.
  5. Remove from heat; let infuse for 10 minutes.
  6. Heat 1 tablespoon oil in a large pot overmedium heat.
  7. Add carrots, onions, fennel,and garlic; cook for 1 minute.
  8. Add coriander,next 3 ingredients, and infused broth withbean. Cover with lid slightly ajar; simmeruntil vegetables are crisp-tender, 12-15minutes. Stir in broccoli and asparagus.
  9. Using a slotted spoon, transfervegetables to a warm serving dish. Bringbroth to a boil and cook until reducedto 1 cup.
  10. Remove broth from heat; whiskin remaining 2 tablespoons oil and 1 teaspoon vinegar.Season with salt, pepper, and additionalvinegar, if desired.
  11. Pour sauce overvegetables.
  12. Garnish with lemon slices andcilantro.
