Ingredients

  • 0.5 cup dry-roasted peanuts unsalted chopped
  • cup cucumber english grated
  • tablespoon fish sauce 
  • cup bean sprouts fresh
  • cup cilantro leaves fresh
  • tablespoon juice of lime fresh
  • ounces rice noodles linguine-style uncooked (such as Thai Kitchen)
  • cups d tricolor slaw mix 
  • tablespoon sugar 
  • tablespoons water 
  • cups water

  • whisk

Directions

  1. Bring 6 cups water to a boil in a large saucepan.
  2. Remove from heat; add rice noodles.
  3. Let soak 3 minutes or until tender.
  4. Drain.
  5. While noodles soak, combine sugar and next 3 ingredients in a small bowl, stirring well with a whisk.
  6. Combine noodles, slaw mix, and next 3 ingredients in a large bowl. Toss with sugar mixture.
  7. Sprinkle with peanuts.
  8. Serve immediately.
