  • 0.3 cup smucker's® apricot preserves 
  • cup celery diced ()
  • pound meat from a rotisserie chicken boneless skinless cooked cubed
  • tablespoon curry powder dried chopped
  • teaspoon dijon mustard 
  • tablespoon parsley fresh chopped
  • cup apples diced green unpeeled ()
  • tablespoons juice of lemon 
  • 0.5 teaspoon lemon zest grated
  •  lettuce leaves 
  • 0.1 teaspoon pepper freshly ground
  • 0.5 cup nonfat yogurt plain
  • 0.3 cup raisins 
  • cup apples diced red unpeeled ()
  • 0.5 teaspoon salt 

Equipment

    Directions

    1. Combine all dressing ingredients; stir until well blended.
    2. Add turkey or chicken, apples, celery and raisins. Toss to coat the salad ingredients. Season with additional salt and pepper, if desired.
    3. Place lettuce leaf on each of 6 serving plates. Top each with mound of salad.
    4. Garnish each salad with chopped fresh parsley or chives.
    5. Deli turkey breast may be used in the recipe. Ask the deli to slice the turkey into 3/4- or 1-inch slices, then cube the meat at home before adding to this salad.
