Within just 35 minutes, you can create a stunning dish that impresses not only with its taste but also its elegant presentation, making it an ideal choice for gatherings or a cozy dinner at home.

This salad combines the rich creaminess of blue cheese—specifically Colston Bassett stilton—with the natural sweetness of ripe pears. The addition of crispy smoked bacon introduces a savory note, while the fresh baby spinach provides a vibrant green base that enhances the overall appeal. Not to mention, this dish is gluten-free, making it accessible for those with dietary restrictions.

One of the highlights of this recipe is the warm bacon dressing, which ties all the ingredients together beautifully. The smoky, salty flavor of the crispy bacon melds perfectly with the tanginess of sherry or red wine vinegar, a drizzle of honey, and a touch of wholegrain mustard, creating a warm, indulgent topping that you won’t be able to resist. Whether served as a side dish, an appetizer, or a light snack, this warm stilton salad is sure to become a new favorite in your culinary repertoire. Ingredients

  •  bacon smoked
  •  pears cored ripe peeled sliced
  • 140 cheese blue such as colston bassett stilton cut into small cubes,
  • 100 baby spinach washed
  • tbsp red wine vinegar
  • tsp clear honey
  • tsp coarse mustard
  • tbsp olive oil

Equipment

  • bowl
  • frying pan
  • knife
  • grill
  • kitchen scissors

Directions

  1. Use kitchen scissors or a sharp knife to snip the bacon crossways into fat matchsticks.
  2. Heat a small, dry frying pan on a medium heat and add the bacon. Cook for about 10 mins, until the fat has run and the bacon is crisp.
  3. To make the dressing, reduce the heat in the pan to low and stir in 1 tbsp water, then the vinegar, honey and mustard. Stir well, scraping up any residue on the base of the pan. Stir in the oil, taste and season.
  4. Meanwhile, heat a ridged griddle pan or grill and cook the pears for about 5 mins on each side, until browned.
  5. Place in a bowl and mix with the cubes of cheese (this melts the cheese a little, making it nice and squidgy). Tip the spinach into a serving bowl, and scatter the cheese and pear mixture over. Top with the warm bacon dressing and serve immediately.
