Ingredients

  • 0.3 teaspoon pepper black
  • cups torn boston lettuce 
  • tablespoons champagne vinegar 
  •  garlic clove minced
  • tablespoons olive oil 
  • ounces pancetta 
  • 0.5 cup cranberry relish leftover
  • small poblano peppers 
  • 0.5 teaspoon salt 
  • 0.5 cup shallots minced
  • cups prewashed spinach 
  • cups turkey leftover cooked chopped

Directions

  1. To prepare salad, preheat broiler.
  2. Cut peppers in half lengthwise; discard seeds and membranes.
  3. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand. Broil 15 minutes or until blackened.
  4. Place in a zip-top plastic bag; seal.
  5. Let stand 5 minutes. Peel and chop peppers.
  6. Combine peppers, turkey, spinach, and lettuce in a large bowl.
  7. To prepare vinaigrette, cook the pancetta in a skillet over medium-high heat until crisp.
  8. Remove pancetta from pan; chop and set aside. Reserve 1 tablespoon of drippings in pan.
  9. Add shallots and garlic to pan, and saut for 1 minute or until tender. Stir in the cranberry sauce, vinegar, olive oil, salt, and pepper. Cook over medium-low heat 2 minutes or until warm.
  10. Pour warm vinaigrette over the salad; toss. Top with pancetta.
  11. Serve immediately.
