  • cup cranberry-raspberry juice 
  • cup cucumber english peeled coarsely chopped
  • tablespoon olive oil extravirgin
  • tablespoons mint leaves fresh chopped
  •  garlic clove minced
  • 0.3 cup green onions chopped
  • 0.5 teaspoon hot sauce 
  • tablespoons juice of lime fresh
  • 0.8 teaspoon salt 
  • cups watermelon cubed seeded
  • 0.5 cup bell pepper yellow coarsely chopped

Directions

  1. Combine first 10 ingredients.
  2. Place half of watermelon mixture in a food processor, and pulse 3 or 4 times or until finely chopped. Spoon into a large bowl. Repeat procedure with remaining watermelon mixture. Stir in cranberry-raspberry juice. Chill thoroughly.
