Ingredients

  • 30 large mint leaves fresh
  • 12 ounces rum light such as bacardi
  • tablespoons juice of lime freshly squeezed (3 limes)
  • Sprigs mint and spears of watermelon for serving
  • 0.5 cup simple syrup glaze 
  • slices watermelon fresh thick

Equipment

  • mortar and pestle

Directions

  1. Use a mortar and pestle to mash the mint leaves.
  2. Remove and discard the rind and seeds of the watermelon.
  3. Put the fruit into a food processor fitted with the steel blade and puree.
  4. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine.
  5. Pour the mixture into a pitcher for serving.
  6. Place ice cubes in 6 glasses and pour the mojito mixture into the glasses.
  7. Garnish with sprigs of fresh mint and spears of watermelon.
  8. Serve ice cold.
