Ingredients

  • 30 ounce .5 can cannellini beans white divided rinsed drained canned
  • teaspoons chili powder 
  • tablespoons cilantro leaves fresh chopped
  •  garlic clove minced
  • tablespoons spring onion thinly sliced
  • teaspoon ground cumin 
  • 15.5 ounce hominy white rinsed drained canned
  •  lime wedges 
  • ounce soy sausage finely chopped (such as Field Roast)
  • tablespoon olive oil 
  • tablespoons oregano fresh chopped
  • teaspoons hot sauce hot (such as Tabasco)
  •  poblano pepper seeded chopped
  • 0.5 teaspoon salt 
  • 1.5 cups water 
  • 1.5 cups onion white chopped

Directions

  1. Mash 2/3 cup beans with a fork.
  2. Heat a large Dutch oven over medium heat.
  3. Add oil to pan; swirl to coat.
  4. Add sausage, and saut for 4 minutes.
  5. Add onion, garlic, and poblanos; saut 6 minutes.
  6. Add chili powder and cumin; cook 30 seconds, stirring constantly.
  7. Add mashed beans, whole beans, 1 1/2 cups water, and the next 4 ingredients (through hominy). Bring to a boil. Cover, reduce heat, and simmer for 20 minutes or until slightly thickened. Stir in green onions and cilantro.
  8. Serve with lime wedges.
