Ingredients

  • ounces mushrooms sliced
  • slices bacon cut into 1 inch pieces
  • tablespoons red wine vinegar 
  • 0.3 cup mild cheese blue crumbled
  • 19 ounce beans white drained and rinsed canned
  • ounce baby spinach 
  • cup onion red sliced
  • small clove garlic grated
  • teaspoon sugar 
  • cup quinoa rinsed
  • teaspoon dijon mustard 
  • servings salt and pepper to taste

Directions

  1. Cook the quinoa as directed on the package.
  2. Meanwhile, cook the bacon in a pan, about 4-6 minutes, and set aside, reserving 2 tablespoons of bacon grease.
  3. Caramelize the onions and mushrooms in the remaining bacon grease, about 20-30 minutes, and set aside.
  4. Add the vinegar to the pan and deglaze it.
  5. Mix in the reserved bacon grease, sugar, mustard, garlic and season with salt and pepper.
  6. Add the spinach and white beans and cook until the spinach wilts, about 2-3 minutes and remove from heat.
  7. Mix in the bacon, onions and mushrooms.
  8. Serve garnished with blue cheese.
