Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • 47.4 ounce great northern beans rinsed drained canned
  • tablespoon canola oil 
  • 1.5 tablespoons chili powder 
  • cups fat-skimmed beef broth fat-free
  • 0.3 cup cilantro leaves fresh chopped
  • tablespoon garlic minced
  • 1.5 teaspoons ground cumin 
  • tablespoons juice of lime fresh
  • teaspoon oregano dried
  • 0.5 cup plum tomatoes diced seeded ( 1)
  • 0.5 teaspoon salt 
  • cups turkey cooked chopped
  • cups onion diced yellow ( 2 medium)

Directions

  1. Heat oil in a large Dutch oven over medium-high heat.
  2. Add onion; saut 10 minutes or until tender and golden.
  3. Add chili powder, garlic, and cumin; saut for 2 minutes.
  4. Add oregano and beans; cook for 30 seconds.
  5. Add broth; bring to a simmer. Cook 20 minutes.
  6. Place 2 cups of bean mixture in a blender or food processor, and process until smooth. Return pureed mixture to pan.
  7. Add turkey, and cook 5 minutes or until thoroughly heated.
  8. Remove from heat.
  9. Add diced tomato, chopped cilantro, lime juice, salt, and pepper, stirring well.
  10. Garnish with lime wedges, if desired.
