Indulge in a refreshing summer dessert with our delightful White Peach Floats. This gluten-free and dairy-free treat combines the delicate sweetness of ripe white peaches with the invigorating zing of fresh ginger and a splash of lemon juice. Perfectly chilled, this dessert will transport your taste buds to sun-kissed orchards, making it an ideal way to cool off on warm days.

The process of crafting these floats is as enjoyable as savoring them. The magic begins with a homemade ginger syrup that layers in warmth and complexity, complementing the luscious peach pulp. After skillfully removing the skins, we press the fruit to extract the vibrant juice, creating a stunningly delicious base. The creamy vanilla ice cream, which is the final touch, adds a delightful contrast, contributing both texture and flavor to this dreamy dish.

With just a little under an hour, this dessert not only presents beautifully but also embodies the essence of summer with every sip and spoonful. Whether it’s a casual get-together with friends or a special family meal, our White Peach Floats will surely impress and satisfy. Don’t forget, any leftover peach juice can be magically transformed into a refreshing spritzer — a perfect addition to your warm-weather celebrations!

Ingredients

  • piece ginger fresh roughly chopped
  • 0.7 cup granulated sugar
  • 0.3  juice of lemon
  • pounds peaches white ripe roughly chopped
  • scoops whipped cream

Equipment

  • bowl
  • sauce pan
  • sieve

Directions

  1. Fill a bowl halfway with ice water. In a small saucepan, over medium heat, dissolve the sugar in 2 cups of water.
  2. Add the ginger, bring to a boil, and cook for 8 to 10 minutes.
  3. Remove and discard the ginger.
  4. Add half the peaches and cook for 2 minutes.
  5. Transfer to the ice water for 1 minute and slip off the skins; set aside. Repeat with the remaining peaches.
  6. Pour the syrup into a bowl to cool (you should have about 1 1/2 cups).
  7. Place the peaches and lemon juice in a bowl and, using your hands, crush the fruit. Spoon the pulp into a strainer placed over a bowl, then press it with the back of a spoon to extract the juice (you should have at least 4 cups). Stir in the syrup and refrigerate for at least 1 hour. Divide the mixture among 4 glasses and top each with a scoop of the ice cream. Tip: If you have leftover peach juice from the floats, add it to sparkling water or wine to make a spritzer.
